1. 125-gram cream cheese
2. 300-gram thickened cream
3. 1/3 cup + 2 tablespoon Caster sugar
4. 2 tablespoon water
5. 1 teaspoon Lemon juice
6. 2 punnets raspberry
7. 1 punnet blueberry
8. 6 blackberry
9. 12 shortbread
10. 12 roasted Almond
1. Shortbread: Crush the shortbread in a fine powder
2. Almond: crush into a chunky powder
3. Raspberry coulis: mix the water, raspberry, and lemon juice together and cook on medium heat. Mash the raspberry into a fine paste and cook for about 8-10 minutes until desired consistency. Keep it aside to cool.
Ø Whisk together Cream Cheese and sugar until combined
Ø With a handheld mixer start whipping the thickened cream
Ø Slowly add the cream cheese mixture while whipping the cream until well combined and hard peak form.
Ø Pour it in a piping bag.
Construction of the Cheesecake
Ø Evenly distribute biscuits between six stemless wine glasses; press well into the base of each glass.
Ø Pipe in the cream cheese cream mixture evenly among glasses.
Ø Spoon in the Raspberry coulis evenly in the glasses
Ø Add some of the blueberry and blackberry on top
Ø Garnish with some almond
Ø Refrigerate for an hour before serving.
